Nothing says “summer” like combining the fresh flavours of lemon and rosemary with great grilling to enhance the overall experience of your family and guests. Our Greek Grilled Lemon Chicken hits all the right notes and gives you the chance to truly show off the attributes of your BBQ as well as your very own skills at the grill!
- 4 – 6 boneless skinless chicken breast cut in half
- 1/3 cup olive oi
- 4 cloves garlic finely chopped
- 2 tsp oregano, dried
- 1/2 tsp basil, dried
- 1/2 tsp tyme
- 1/2 tsp rosemary, fresh
- 1 tbsp lemon zest
- 1/3 cup fresh lemon juice
- Kosher salt, freshly ground
- Pepper, freshly ground
In a medium size mixing bowl combine the olive oil, herbs, lemon juice, zest, garlic and salt & pepper with a whisk. Place the chicken breast in the marinade and massage gently to fully cover the chicken. Place in the refrigerator for a minimum of 8 hours.
Preheat grill on medium/high heat so it’s at 450°. Brush the grill with olive oil to prep. Grill the chicken breast for about 4 minutes a side or until the internal temperature is 165°.
Let rest on a board for 5 minutes and serve with your favourite medley of grilled vegetables.
