Summer is in full swing and what better way than to treat your family and guests to a sweet yet savoury barbecue delight than with our very own Hawaiian Pineapple Chicken recipe?
Ingredients
- 1/4 cup pineapple juice
- 1/2 cup brown sugar, sifted
- 3 cloves minced garlic,
- 1/3 cup soy sauce
- 1 tsp sesame oil
- 1 tsp hot sauce
- 1 tbsp fresh cilantro, chopped
- 4 skinless, boneless chicken breasts
- 1 tsp freshly grated ginger
- 1 pineapple, cored and cut into wedges
Directions
Using a medium size bowl, whisk together the pineapple juice, brown sugar, soy sauce, ginger, pineapple and sesame seed oil. Place chicken breast in the bowl and let marinate in the fridge for minimum 8 hours.
Brush canola oil on the grill and preheat your to medium high heat. Place chicken and pineapple on the barbecue and grill until internal temperature reaches a minimum of 165º – approximately 5 minutes a side. Be sure to brush with marinate throughout the grilling process and enjoy.
