The Timeline (Sunday)
2 hours before dinner: Take souvlaki out of the freezer to thaw. Chop the Greek salad vegetables. Preheat the oven to 220°C for the potatoes.
1.5 hours before: Get the potatoes in the oven. Cube 1 kg of potatoes, toss with olive oil, oregano, salt, pepper, and lemon juice. Roast 45-55 minutes, tossing once.
30 minutes before: Fire up the grill. Set the table properly — the good plates if you have them. Bring out the Tzatziki and Tirokafteri from the fridge to warm slightly.
15 minutes before: Grill the souvlaki, 4-5 minutes per side. Warm the pita on the edge of the grill or in the oven.
At the table: Rest the souvlaki 3 minutes. Bring everything to the table together. Grace or a toast — whatever your family does. Then everyone digs in.
