At home, marinating a chicken breast well means at least four hours in the fridge, ideally overnight. That’s how the flavour penetrates. So how does Glacial Treasure deliver deeply marinated flavour when you buy it, thaw it, and cook it same-day? Here’s what’s happening behind the scenes at our facility.
Long Marination Before Freezing
At our Toronto facility, our chicken products are marinated for the full recommended time — not the shortcut version. When our Chicken Souvlaki is being produced, the chicken sits in Anastasia Dikeos’s original marinade for the length of time required for the flavour to fully penetrate. It’s the way we’ve made souvlaki commercially for over thirty years, and it’s why our products taste like they came from a Greek grandmother’s kitchen rather than an industrial production line.
IQF Freezing Locks the Flavour In
Once the chicken has fully marinated, it’s individually quick frozen at temperatures cold enough to lock the marinade into the meat. The IQF process doesn’t just preserve the chicken — it preserves the marinade penetration. When you thaw a Glacial Treasure product months later, the flavour is exactly as it was when it went into the freezer.
You Skip the Wait, We Do the Work
This is the practical benefit: at home, you pull a Glacial Treasure package out of the freezer, thaw it (overnight or under cold water for quick thaw), and cook it. No advance planning. No ‘I want to make souvlaki tonight but I forgot to marinate the chicken this morning.’ The marinating was done at our facility. The wait is over.
The Deeper Point
Great food isn’t about shortcuts. It’s about doing the hard work in the right place. When we do the marinating at our facility — properly, with time, using recipes refined over decades — you get to skip the home cook version. That’s the entire point of a premium pre-marinated product done right. Not to remove the flavour, but to remove the wait.
Available at Fortinos and always at our Cash & Carry.
