Ingredients
- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- juice of one lemon
- 4 cloves garlic , minced
- 1 tbsp dried oregano leaves
- 1 tsp salt
- 1/2 tsp black pepper
- 3 san marzano tomatoes
- 1 small cucumber
- 1 red onion
- 1 1/2 cups black olives
- 1 tsp sesame seeds
- 1 large romaine lettuce
- 2 boneless skinless chicken breasts
Instructions
Combine the oil, red wine vinegar, lemon juice, garlic, salt, pepper and oregano and let marinate for 20 minutes.
Add all the vegetables, with the exception of the romaine lettuce and enrobe in the dressing and let marinate for an additional 40 minutes.
Cook the chicken breast and be sure to baste with olive oil. Once fully cooked, slice the chicken breast and let sit.
Just prior to serving, mix the vegetables, cooked chicken and romaine lettuce in a large salad bowl. Sprinkle with sesame seeds and serve.
