Souvlaki bowls are the perfect weeknight dinner — filling, healthy, endlessly customizable, and on the table in under 30 minutes. Here’s our definitive version using Glacial Treasure Chicken Souvlaki.
Ingredients (Serves 4)
- 1 package Glacial Treasure Chicken Souvlaki (thawed)
- 2 cups long-grain rice
- 4 cups chicken or vegetable broth
- 1 tsp dried oregano
- Zest and juice of 1 lemon
- 2 cups cherry tomatoes, halved
- 1 English cucumber, diced
- 1/2 red onion, thinly sliced
- 1 cup crumbled feta
- 1/2 cup pitted kalamata olives
- 1 cup tzatziki (ideally D&D Poultry’s homemade)
- Fresh dill and parsley for garnish
- Extra virgin olive oil, salt, pepper
Method
Cook the rice: bring the broth to a boil, add rice, oregano, lemon zest, a pinch of salt. Reduce to low, cover, and simmer for 18 minutes. Turn off heat and let sit covered for 5 minutes. Fluff with a fork and stir in the lemon juice.
Grill the souvlaki: preheat a grill or grill pan to medium-high. Grill the thawed souvlaki skewers 4-5 minutes per side until charred and cooked to 74°C (165°F). Let rest 3 minutes then remove the chicken from the skewers.
Prep the vegetables: while the rice cooks, combine tomatoes, cucumber, and red onion in a bowl. Drizzle with olive oil, sprinkle with salt and pepper, toss.
Assembly
Divide the rice among four bowls. Top each with a portion of grilled souvlaki chicken. Add a generous scoop of the vegetable mixture. Sprinkle with feta and olives. Add a big dollop of tzatziki. Garnish with fresh dill and parsley. Serve with warm pita on the side.
Make It Your Own
This bowl is a template. Swap the rice for quinoa or farro. Add roasted red peppers or hummus. Use a green salad instead of raw vegetables. Include grilled halloumi. The souvlaki is the anchor — everything else flexes. What matters is that the chicken is Glacial Treasure, and the tzatziki is homemade.
