How to Cook It Right

Thaw completely in the fridge overnight. Grill over medium-high heat, five to six minutes per side, until the internal temperature hits 71°C (160°F). Rest for three minutes before serving. Pork actually benefits from that rest more than chicken does — the juices need a minute to redistribute.

Serve with warm pita, tomato and red onion, a squeeze of fresh lemon, and tzatziki. Rice or potatoes on the side make it a full meal.
