Summer entertaining in Ontario is about keeping it simple, keeping it good, and making sure everyone leaves happy. Here’s a backyard BBQ menu built around Glacial Treasure chicken, designed to serve eight to ten people with minimal stress.
The Menu
- Chicken Souvlaki and Pork Souvlaki (2 packages of each) — the main event
- Grilled corn on the cob (8-10 ears)
- Greek salad (make ahead)
- Roasted lemon potatoes (in the oven while the grill goes)
- Warm pita and homemade tzatziki (from our Cash & Carry)
- Watermelon and feta salad (dead simple, always a hit)
- Baklava for dessert (buy it, don’t make it)
Shopping List From Fortinos
2 packages Chicken Souvlaki, 2 packages Pork Souvlaki, corn, potatoes, feta, tomatoes, cucumbers, red onion, kalamata olives, pita, lemons, olive oil, oregano, watermelon, mint, baklava. Total shopping time: 20 minutes.
The Timeline
Morning of: prep the Greek salad ingredients (chop everything, keep dressing separate). Make the potatoes (roast for 30 minutes at 220°C). Slice the watermelon.
One hour before guests arrive: light the grill. Set up the buffet with plates, cutlery, napkins. Warm the pita in foil packets.
15 minutes before serving: dress the Greek salad. Assemble the watermelon salad (cubed watermelon, crumbled feta, torn mint, drizzle of balsamic).
Serve: grill the souvlaki in batches (4-5 minutes per side, medium-high). Corn goes on the grill at the same time. Guests plate and eat as things come off.
