Great shawarma has always been a restaurant food — the vertical spit, the seasoned meat crisping for hours, the shave-and-serve technique that home kitchens can’t replicate. Or so we thought. Turn out, with the right pre-marinated chicken and the right home cooking approach, you can deliver restaurant-quality shawarma at home in 30 minutes. Here’s how.
The Secret Is Pre-Marinated Chicken
The reason restaurant shawarma tastes so distinctive is the marinade — a complex blend of cumin, coriander, turmeric, paprika, cinnamon, cardamom, garlic, and lemon. Getting that blend right at home is possible but time-consuming, and it needs hours to properly penetrate the chicken.

The Cooking Method
Preheat your oven to 220°C (425°F). Line a sheet pan with parchment. Spread the thawed shawarma chicken pieces in a single layer with a little space between them — don’t crowd the pan or they’ll steam instead of crisp. Roast for 20-25 minutes, tossing halfway through, until the edges are dark and caramelized. That caramelization is what gives shawarma its restaurant character.
If you want to get closer to the shaved-off-the-spit texture, finish under the broiler for 2-3 minutes at the end. Watch carefully — the sugars in the marinade can burn quickly.
Building the Perfect Shawarma Wrap
Warm large flour tortillas or pita in a dry pan or briefly in the oven. Fill with shawarma chicken, then add: thinly sliced tomato, thinly sliced red onion (or pickled turnip if you have it), shredded lettuce, sliced pickles, and a generous drizzle of garlic sauce or tahini. Add a small handful of parsley if you have it. Roll tight.

Skip the wrap and serve the shawarma over rice or greens with the same toppings, plus hummus and a lemon wedge. Same flavour, different presentation, ready to meal-prep for the week.
