Meal Prep Sunday: Cook Once, Eat All Week with Glacial Treasure

Two hours on a Sunday, one shopping run at Fortinos, and you have five weeknight dinners ready to reheat and serve. Here’s the meal prep plan.

The Shopping List

From Fortinos: 2 packages Glacial Treasure Chicken Souvlaki, 1 package Glacial Treasure Lemon Pepper Chicken Breast, 1 package Glacial Treasure Chicken Shawarma (or Pork Souvlaki as a substitute), 2 cups rice, 2 large potatoes, mixed greens, bell peppers, cucumber, tomatoes, red onion, feta, olives, tortillas, tzatziki (or ideally the homemade from our Cash & Carry), hummus, lemons.

Sunday Prep (2 hours)

Grill the souvlaki skewers over medium-high heat, 4-5 minutes per side. Remove from skewers and store.

Roast the shawarma in the oven at 220°C for 25 minutes. Slice and store.

Pan-sear the lemon pepper chicken breasts, 5 minutes per side. Slice and store.

Cook the rice with a bit of oregano, lemon zest, and salt. Divide into portions.

Cube the potatoes and roast at 220°C for 30 minutes with olive oil, salt, and pepper. Store.

Prep vegetables: chop cucumber, tomato, red onion, bell pepper. Store separately.

Store everything in airtight containers in the fridge.

The Week of Dinners

Monday: Souvlaki rice bowls with tzatziki, feta, cucumber, olives.

Tuesday: Shawarma wraps with tortillas, lettuce, tomato, and hummus.

Wednesday: Lemon pepper chicken over Greek salad with feta and lemon vinaigrette.

Thursday: Souvlaki pita wraps with roasted potatoes on the side.

Friday: Shawarma over rice with roasted vegetables and tahini drizzle.

The Numbers

One Sunday afternoon of prep. Under $80 in groceries (varies by market pricing). Five dinners for a family. Zero take-out orders.
